Sensational Spring Produce

So many fruits and vegetables come into season over the spring months like avocado, pineapple, passionfruit, mango, melons, zucchini, green beans, Asian greens, peas and spinach, just to name a few. 

Below are some quick ideas for all the glorious spring produce in season now!

Chargrilled Asparagus

Chargrill on a barbecue until tender, then transfer to a platter. Drizzle with chilli sauce and aioli. Serve with crusty bread and salad leaves.

Caramelized Pineapple 

Remove some vanilla ice cream from the freezer. Soften slightly, then stir through some toasted shredded coconut. Return to the freezer. Sprinkle pineapple slices or wedges with a touch of brown sugar or palm sugar. Char grill or pan-fry until caramelized. Serve with scoops of coconut ice cream.

Papaya Pots

Halve small papaya and remove seeds. Place on a plate. Fill with yogurt (any flavour!) and then top with seeds, berries and nuts.

This is a great alternative for a healthy breakfast or dessert. 

Fennel and Zucchini Side Salad

 Carefully shave zucchini and fennel using a v-sliver. Place on a large platter. Drizzle with lemon juice, a little olive oil, handful of mint leaves, toasted pine nuts and currants.

Stuffed Avocados

Halve avocados and remove stones. Toss some shredded chicken with toasted chopped macadamia nuts, lemon juice, mayonnaise, a handful of chopped baby spinach and finely chopped chives. Divide mixture amongst avocado halves and pile any extra filling on top.

Orange Jelly Cups

Make up a packet of orange jelly. Set aside to cool for 20 minutes. Halve oranges and remove pulp. Fill orange halves with jelly. Refrigerate until set.
